Ingredients:
- Beef with bones- 500 – 600 gms
- Onions chopped- 3 medium
- Ginger garlic paste- 2 tsp
- Tomatoes- 2 medium chopped
- Green cardamom- 4
- Cloves- 5
- Cinnamon- 3 pieces
- Black cardamom- 2
- Peppercorns- 10
- Whole dry red chillies- 2
- Turmeric powder- 1/2 tsp
- Red Chilli powder- 2 tsp
- Coriander powder- 2 tsp
- Cumin powder- 1 tsp
- Whisked curd/yogurt- 3 tbsp
- Salt- 1 tsp
- Oil- 3 tbsp
I recommend olive oil and avocado oil for the best cooking results:
Preparation:
Chop the onions and the tomatoes.
Process:
- Heat oil in a pan.
- Add all the whole garam masalas and stir.
- Now add the dry red chillies and mix well.
- Add the chopped onions and fry for around 10 mins on medium heat till light brown in colour.
- Now add the ginger garlic paste and fry for around 2 mins till the raw smell is gone.
- Put in the Beef pieces, the powders and 1 tsp salt. Mix well.
- Now fry on high for around 2 mins and then roast on medium for around 10-12 mins till the Beef pieces are browned and oil separates.
- Switch off flame/ lower heat and add in the whisked curd/yogurt.
- Mix on low for 2-3 mins and then on medium for around 5 mins till the curd is cooked and oil separates.
- Now add in the chopped tomatoes and cook for around 10 mins till soft.
- Add 2 cups of water, mix & cook for 2 mins.
- Now transfer this to a pressure cooker and cook till 3-4 whistles. Allow to cool before opening the pressure cooker.
- Alternatively, if the Beef is tender you can continue to cook in the pan till the meat is soft.
- Serve hot with roti or rice.
